This recipe is meant to give a little extra flavor to a classic dish and hopefully encourage you to experiment with ingredients. You can choose to either get pre-cooked chicken or buy fresh chicken and season it to your taste. Some may like coating the chicken breasts in vegetable oil and sprinkling some garlic-based seasoning on them or rubbing minced garlic on them before baking. This keeps them juicy and full of flavor. If you choose to cook up enough chicken you can make some really great dinners the following evenings. You should also feel free to add nuts, raisins or onions to this dish if desired.
- 5 tablespoons mayonnaise
- 2 Gala apples peeled and chopped
- ½ cup vanilla yogurt
- 2 tablespoons lemon juice
- 25 seedless grapes, halved
- 3 chicken breasts, shredded
- 2 stalks celery, chopped
First get out a medium sized mixing bowl to toss your ingredients in.
Shred up your chicken and put it aside.
Wash your grapes, celery, and apples.
Peel your apples, halve them and continue to chop them in to small chunks.
Slice your grapes in half, and chop your celery up.
Gather your fruits, veggies and chicken up in to your mixing bowl. Add your mayonnaise, yogurt, lemon juice and gently mix everything together until everything is adequately coated.
Now you can choose to eat this as a salad or put it between toasted bread for an amazing sandwich or wrap it in a tortilla.
